How a length grader (indented cylinder) works
The length grader is the workhorse of modern mills. It uses one to three rotating cylinders whose inner surface is covered in small indented pockets (which is why it is also called a trieur). As the cylinder turns, short broken kernels drop into the pockets, are lifted up, and fall into a central trough, while longer whole grains stay in the cylinder body and discharge separately (IRRI). Well-set indented cylinders can reach separation efficiencies above 95%.
Head rice vs broken rice: what grading decides
Head rice is a whole, unbroken kernel, defined as a grain that is at least three-quarters of its full length; anything shorter is counted as broken (FAO). A well-run mill typically produces 50-60% head rice, 5-10% large brokens, and 10-15% small brokens (IRRI). Since head rice sells at a premium and brokens at a discount, the grader directly protects the mill’s revenue. Rice grade and the Indian standard
In India, procured rice must meet the Uniform Specifications set by the Department of Food and Public Distribution. For raw rice, the maximum permitted broken content is 25% for both Grade A and Common rice, and for parboiled rice it is 16%; brokens smaller than one-eighth of a kernel are treated as foreign matter (FCI Uniform Specifications). A correctly-set grader is how a mill keeps broken content inside these limits and avoids rejection.
Does a rice grader control dust?

How grading fits with the rest of the mill
A grader can only sort the rice it receives; it cannot un-break a grain.
